Jan. 10th, 2011 08:06 amYou know, I can deal with a lot of stuff, but 8 AM before my daily caffeine intake is still too early to be asked to comprehend the concept of 'yogurt loaf'. Someone please tell me it's some form of quickbread with the yogurt in the mix, rather than formed and molded yogurt that has to be sliced and eaten with an implement?

Date: 2011-01-10 04:22 pm (UTC)Labneh is made by taking any quantity of yogurt and putting it in a strainer lined with a cheesecloth or tea towel (or, heck, gather the tea towel around the yogurt and suspend the package above your sink). After a few hours, you'll have some quantity of whey (a white, nigh-transparent liquid) that's run off, and some quantity of labneh left in the tea towel. As this is the consistency of cream cheese or chèvre, you could, say, press it into a form. However, as labneh doesn't have rennet helping to hold it together the way a proper cheese does, fruit or whatever that you want to see all through it should be stirred in while it's still yogurt, I should think.
It wouldn't quite be solid enough to require an implement: labneh remains squishy enough to be spread on other things.
