What the hell is Sam going to study? I have no idea what that boy's major is likely to be, just that he's going to Princeton for it. Any clues?

Depends on how much of movie canon you want to use. According to the novelization, he got such a big mental boost from the Allspark that he had a perfect score on the SAT. That indicates a boost both in pure memory skills but also major math skills. Seeing he's got alien refugees for buddies, maybe he'd wanna go the physics/astrophysics route to understand them or relate to them better. Would explain why he was taking that astronomy class in the first place.

I think he should be undeclared. My impression of the character from the second movie (and I know you're doing an AU, but you gotta start somewhere) was that he was pretty unclear about where he was going with his life. He gets sort of carried along until Optimus gets killed, and it's only after that point that he tries to take control of his life.
