Dude. Do you live in an area where White Lily flour is available? King Arthur flour is wonderful for bread but the protein level is too high for properly Southern-style biscuits- you get tougher gluten and less fluffy biscuits if you use King Arthur, or any of the Northern flours. If you can hook me up with some grade C or a five pound sack of White Lily (all-purpose is probably best- bread flour's too strong), I'd be right grateful.
