Which fabric do I want to use for my first serious stab at underwear sewing?

You sissy, just because the black ITY fabric is slippery as hell and your initial test piece with it was ridiculously hard to pin and manipulate properly is no grounds for not using it again. Black ITY with cotton jersey lining.

After the underwear referred to in question #1, I plan to do one more pair with some nice gray fabric and matching elastic. After that, what do I do next?

Long story short, I'm trying to get familiar enough with knit fabric to actually feel safe cutting into the batch of shiny iridescent stuff I bought in January. I would like to eventually indulge a terrible urge I have to sew a matching sports bra and pair of leggings from that stuff, but not until I can genuinely say I know what I'm doing on knits.
Wovens, I have two or three things lined up, I'll deal with them if I get too frustrated to do knits for a while.
