I have a hard time believing your recipe is for Real Italian Calzones, friend. Yes, you do not put the sauce on the inside, and I am very proud of you for realizing that, but you lost all your cred when you made the filling with cheddar cheese.
Do not get me wrong, cheddar is lovely, but if you are going to be all "REAL ITALIAN", you do not use cheddar cheese.
