Think I'm going to get the chocolate cookbook out tonight and make their Cincinnati chili recipe. I need to stop by the supermarket and pick up a few things, but I've got all the spices, so that shouldn't be a problem.

I'm led to understand one of the traditional preparations involves serving the chili over spaghetti and then putting cheddar cheese on it. Is there anything in particular I should know about this method? Sharp cheddar, mild, what? Does it get served with crackers, bread, corn chips, anything like that?

Sharpest cheddar you can find, I prefer! And some Fritos are okay on top of spaghetti, or just do Frito pie and top them with the chili. No bread or anything fancy. Spaghetti + chili + Fritos and a beer!

Cincinnati-area native chiming in: Never had Cincinnati chili before, and can't fathom putting chocolate in it, but that's neither here nor there. When Mom made chili, it was: Spaghetti, cheddar or Mexican-blend cheese, she put sour cream in it as well, buttered crackers.
And milk.
