I need to get a thermometer of some kind and measure the temperature over the course of a few days in the uninsulated closet where I keep my air conditioner. It's just occurred to me that that space is probably cool enough during a New England winter/spring for me to use as a cheese aging space....

Nurseries usually have ones that track highs and lows, at least on a daily basis. You might need to write the numbers down and reset each day. Of course with digital technology, there may be ones that will track consecutive days.
