Homemade oat milk works pretty well in coffee, but gets a little disturbingly separated in the bottle and has to be shaken up.

If you, like me, are not phased by the use of xanthan gum, about 1/8 teaspoon of xanthan gum added to a 1-cup-oats, 3.5-cups-water recipe fixes this up fairly nicely. The result is about on par with 1% milk, mouthfeel-wise.

Ongoig experiments with ratios, flavors, etc as I am largely using oat milk in my coffee and would like to make it a lowfat non slimy plausible alternative to cream.
