Apr. 7th, 2013 06:35 pmMade my own corn chips- not tortilla chips, as there was no tortilla phase involved. These were more on the order of homemade Fritos. Masa harina + stone ground cornmeal + salt + water + oil. Roll out, cut, deep fry, drain, salt. There you go. They're pretty good, although I burned some and rolled some of the others too thick.
The nacho cheese sauce wasn't too bad but mine came out kind of thicker than I think it was supposed to. Possibly because I used neufchatel and low fat cheddar in an effort to make it marginally less arterially painful. Still tasted all right, but I think next time I'm going to use Tabasco instead of Crimson Chili Sauce and use an extra-sharp cheddar, as I personally prefer cheddar as sharp as I can get it most of the time.
Tried to make taco filling from a Cook's Illustrated recipe to use as meat on these nachos. I inadvertently knocked way too much cayenne into the mix. I will be making chili tomorrow and mixing this stuff in with what I do with the other meat and beans; that should balance things out a bit.
Not that I don't enjoy cooking but the fact that I want some sort of dessert and have all the ingredients for homemade Hostess cupcakes, but have to mix them and bake them myself, is reminding me of why convenience foods exist in the first place.
